Mike Speck named CEO of Asian Box August 7, 2018 Mike Speck, former COO of The Halal Guys, was named CEO of Asian Box, a 10 unit fast casual chain based in California. Speck takes over from the Asian Box founder, Frank Klein, who will move into a brand ambassador role and focus on opening a new concept.

Speck helped grow The Halal Guys from four to almost 100 units in three years and looks to lead Asian Box to future growth. Asian Box was founded in 2012 and looks to expand outside of California through franchise partners.


Lawry's Restaurants Names Ryan O'Melveny Wilson Chief Marketing and Strategy Officer August 6, 2018--(Food News Feed) Ryan O'Melveny Wilson has been named Chief Marketing and Strategy Officer for Lawry's Restaurants globally. Wilson, the fourth generation member of the Frank and Van de Kamp families to be an active member of Lawry's, will oversee the 80-year-old brand's revitalization beginning this fall together with his uncle Richard Frank, CEO & Chairman of Lawry's Restaurants. Lawry's has remained largely unchanged since Wilson's great-grandfather, Lawrence Frank, opened the restaurant on La Cienega Boulevard in 1938. Under Wilson's direction, its next era will feature a more diverse menu and dramatic design anchored by an expanded bar area and reinvigorated dining room, that simultaneously preserves Lawry's rich history and signature tableside service. "Some of my earliest memories are of watching the carvers push the silver carts through Lawry's dining room," says Wilson. P.F. Chang’s Chief Executive Michael Osanloo Named Portillo’s CEO

He will take over in October for Keith Kinsey, who is retiring. August 6, 2018--(Restaurant Business Online) Portillo’s on Monday named P.F. Chang’s chief executive Michael Osanloo the company’s new CEO. Osanloo will replace Keith Kinsey, who has been the 52-unit Portillo’s CEO since 2015, on Oct. 1. Kinsey is retiring. “Growing up in Chicagoland, Portillo’s was the first restaurant that I drove to when I got my driver’s license,” Osanloo said in a statement. “I’m thrilled to be returning to Illinois to join one of the country’s most beloved restaurant brands.” The private equity firm Berkshire Partners paid nearly $1 billion for the Oak Brook, Ill.-based Portillo’s in 2014. Kinsey was named CEO the next year. Under Kinsey, the company has quickly expanded outside of its Chicago home, opening locations in Florida, Wisconsin, Minnesota and central Illinois. Osanloo, meanwhile, has been with P.F. Chang’s since 2015. He has held leadership roles at Kraft Foods Group, Caesars Entertainment and Bain & Co. Portillo’s founder Dick Portillo called Osanloo a “great choice to lead the company” and said he “has what it takes to continue the legacy of exceptional standards on which I founded this wonderful company.” Portillo’s has system sales of nearly $339 million, according to data from Technomic. Its unit volumes averaged nearly $7 million.

Wetzel’s Pretzels Names Pet Industry Veteran as CFO July 24, 2018--(Wetzel’s Pretzels) Kimberly Smith is tasked with boosting franchisee profitability as the company looks to grow Wetzel’s Pretzels named Kimberly Smith, a former PetSmart executive, as the company’s new CFO. Smith, who started during the second quarter, will be tasked with driving profitability for the company’s 320 franchises. She replaced Michael Nishi who left the 340-unit chain last year to take on the role of CFO at Southern California-based Lemonade. Prior to joining the Pasadena, Calif.-based pretzel chain, Smith served as PetSmart’s vice president of finance. She spent 11 years at the company in various finance roles. Stores at premium mall locations perform even better, Schuler said. Besides destination malls, the operator is adding new inline stores to Walmart and outlet centers. The company recently opened its first location in China. A master franchisee in China plans to open 50 stores in the country.   1. John Imbriolo, who will serve as Chief Culinary Officer. The son of an Italian immigrant chef, Imbriolo began his career at age 13 in his father’s kitchen, the fourth generation in his family to study Italian cuisine. After earning a degree in Restaurant Management, Imbriolo honed his skills at hotels and restaurants across New York City including Naples 45 and the famed ‘21’ Club. He has been a featured chef at the James Beard Foundation and his creations have graced many prominent magazines and newspapers including La Cucina Italiana, New York Magazine and the New York Times. Chef ‘Johnny I.’, who often makes trips to Italy for inspiration, is certified in the preparation of classic Neapolitan pizza by the Associazione Margherita Regina in Naples, Italy. Also joining the new team, Allison will work closely with Blum and Imbriolo on FoodFirst’s culinary strategy of sourcing the best ingredients for its chefs and restaurants. She has been a long-time executive in purchasing, previously sourcing high quality and sustainable ingredients for the specialty brands of Darden Restaurants including Season’s 52 and Capital Grille. She has served as the Director of Supply Chain for Red Lobster, specializing in sustainable seafood. Allison, who is also familiar with suppliers in Italy, will source the best stone-pressed extra Virgin olive oil and the best Italian pastas, along with her skill and passion of sourcing high-quality Italian wines. In the United States, she will focus on sourcing the freshest plant-based ingredients and highest quality seafood, which are critical to the Italian Mediterranean Way of Cooking.

  3. Angelo Landi will serve as VP of Culinary Operations. Also joining the new team, Landi’s main area of focus will be upgrading the open kitchens for each restaurant and working closely with both the culinary team at the Restaurant Support Center and with each Executive Chef at the company’s 110 BRIO and BRAVO restaurants. Landi, is first and foremost a chef, who created, owned and operated his own restaurant for many years, so he knows what it is like to be ‘close to the action’. He also has meaningful experience with multi-unit operations, having held high-level culinary positions at Maggiano’s, Ruth’s Chris and most recently, at True Foods. Landi will set the BRIO and BRAVO restaurant teams up for success with well-designed and well-run kitchens.

  4. Brian Harvey will serve as Director of Culinary Innovation at BRAVO. Chef Brian has degrees in both the culinary arts and the pastry arts and has been creating innovative Italian food for the company over the past twenty years. His key priority going forward is to bring more freshness and simplicity to the BRAVO menu.

  5. Alison Peters will serve as Director of Culinary Innovation at BRIO. Chef Alison has held key culinary roles in New York and New Orleans before joining BRIO where she has been an integral part of developing various menus. Tender Greens promotes Apple vet as CEO to win the salad wars

New president and CEO Denyelle Bruno was one of the first hired to build Apple’s retail division. Her management style is vastly different from Steve Jobs’s. July 11, 2018--(Fast Company) There are a few things you need to know about Denyelle Bruno as she steps into her new role as President and CEO of the Los Angeles-based fast casual restaurant chain Tender Greens, taking the reins from founder Erik Oberholtzer. One is that she’s got an aggressive plan to expand the business. Tender Greens currently has 28 locations, and Bruno wants to nearly double that in the next two years. The other is that the retail veteran has earned the chops to do it. Bruno started working in retail at Macy’s West directly after college. The plan, according to her, was to work there until she got a “real” job more aligned with her psychology degree. “Turns out I was good at retail,” Bruno says, “For me it almost like a game.” The chaos and the intensity suited her well, she says, but more than anything, she loved the “cycle of interaction” between retailer and customer. It would inform her future management style that she categorizes as “servant leadership.” Her philosophy stands in sharp contrast to one of her former bosses, Steve Jobs. “We couldn’t be more different,” she asserts, adding that she did take some valuable lessons from him during her tenure. Bruno was one of the seven people recruited to start Apple’s retail business, back before the signature stores and their genius bars became a ubiquitous part of our brick-and-mortar shopping experience. During the designing and building of the stores, Bruno recalls one particular moment in which Jobs came in to do a walk-through (which he did regularly to monitor progress and offer feedback). Known for his laser focus on small but significant details, Bruno saw that he was unhappy with the direction of the grain of the wood on the shelves and complained to the contractor. The other man explained that trees don’t always grow in the direction he wanted the grain to go, and Jobs fired him on the spot. Bruno admits Jobs’s reaction was severe, and his authoritarian, dictatorial approach doesn’t reflect her management style, and is rarely successful anywhere else. Jobs’s particular flavor of being a wildly brilliant visionary who constantly pushed boundaries wasn’t based on ego, necessarily, she says. “It was purely based on the drive for something better.” Her takeaway from this “typical Steve story” was more about the way he thought. “Don’t start with no. Don’t imagine anything is not possible,” she remembers learning. “Because the second you start shutting things down in a competitive environment, you set yourself up to lose.” Leading Tender Greens will be an exercise in growing despite a very competitive environment; fast casual restaurants are still the smallest segment of the restaurant industry. According to the National Restaurant Association, there are over 1 million fast casual restaurants in the U.S. that employ over 14 million people. However, industry research firm Technomic reports that fast-casual restaurants will grow by 7.5% this year, leading other dining establishments. Bruno remains confident. Tender Greens is on track to pull down up to $100 million in revenue for the first time this year, which means the strength of the brand is growing. Bruno’s career, apart from Apple, has taken her through leadership roles at equally strong brands in different industries, including Peet’s coffee, Drybar, and Designs Within Reach home furnishings. “Every place I’ve gone, I’ve had more autonomy and responsibility, and that excites me,” she says. But more to the point, she notes that each place had devotees who are quite likely to cross-pollinate with her current employer. “The person who would buy an Apple computer would drink Peet’s Coffee, get a blowout at Drybar, and eat at Tender Greens.” As a first-time CEO, Bruno’s next order of business is to continue building out the A-team she needs to shepherd the next phase of explosive growth for the chain. Although skills and experience will vary from role to role, Bruno maintains that she’s looking for people who are ready to ask questions. “I expect them to challenge me,” she explains. “I would never out in the wild without vetting it and having someone poke holes in it.”
